Champorado is a traditional Filipino dessert, a sweet porridge made with sticky rice and cocoa. Inspired by Mexican hot chocolate, it was introduced to the Philippines during the Spanish colonial era. The rice is slowly cooked until creamy, then mixed with cocoa to create an intense chocolate flavor. This comforting dish is often served warm for breakfast or as a snack, accompanied by a drizzle of condensed milk or coconut milk to mellow the cocoa flavor. Traditionally, champorado is sometimes enjoyed with "tuyo," a dried and salted fish, for a unique balance of sweet and savory flavors.
